Our fig tree has been in our family for years and the summertime is when we finally get to pick and eat them. Just the best and super sweet. When we vacationed down the Jersey Shore the house we rented had a wonderful fig tree in the backyard with these amazing figs. I would love topping them with the recipe below and enjoying them during happy hour as we watched the sun setting on the bay.
En-Joy & cook just for the love of it
Figs and Gorgonzola Wrapped with Prosciutto
Slice ripe figs in half. Top with about a teaspoon fig jam, teaspoon-ish of gorgonzola or your good quality blue cheese. Wrap with thin slice of prosciutto. Can eat as is or heat on grill for a few minutes and serve warm. Up to you! Yum! Perfect for your beach, deck or patio happy hour.
