In honor of my oldest daughter's Birthday today, here is our family favorite birthday cake! Triple Layer Cannoli Cake! When we were growing up, my Mom always bought our birthday cake from Rispoli's Italian Bakery in RIdgefield Park, New Jersey. I just had to make one comparable when we had birthday parties for my girls. This version is pretty close and requested at all our celebrations. You can make a scratch cake, my favorite is a genoise-type, but this is this a shortcut version in my cookbook. You won't have a piece leftover, I promise!
