Irish Soda Bread Muffins
2 cups buttermilk (1 pint)
2 eggs
Âź cup unsalted butter, melted, divided
4 and 2/3 cups all-purpose flour
1 cup sugar plus 2 tablespoons, divided
2 tablespoons caraway seeds
1 tablespoon baking soda
1 teaspoon baking powder
½ teaspoon salt
2 cups raisins
Pre-heat Oven to 350 degrees F.
Spray muffin pans with non-stick cooking spray (or
spread with soft butter to coat well ); set aside.
In large bowl combine buttermilk, eggs and 3 tablespoons melted butter; mix well and set aside.
In medium bowl, combine flour, sugar, caraway seeds. baking powder, baking soda, and salt. Slowly add to buttermilk mixture, stirring after each addition, until combined; stir in raisins.
Spoon about 1/3 cup mixture into each prepared muffin cup pan.
It will fill about 16 muffin cups. (Note: Do not use paper cups.)
Brush with remaining melted butter and top with remaining sugar.
Bake 30 to 35 minutes or until golden brown.
Serve immediately warm with Irish creamy butter.
