Add A Kick: Chorizo Sliders with Chipotle Mayo & Avocado

Sliders are such a big hit in the summertime. This recipe was inspired by a food shoot that used ground chorizo instead of ground beef for an extra kick of heat. Here is my version with a twist. It's served on my favorite little potato slider buns.

Chorizo Sliders with Chipotle Mayo & Avocado

Mix 1 cup of your favorite mayonnaise with 3 chipotle peppers and 1 tablespoon of sauce from the can, and 1 tablespoon chopped fresh cilantro. Set aside and chill. Shape 1 package (12 ounces) ground fresh chorizo (can find it by ground beef case in supermarket) into 12 patties about 2 ½ inches. Grill or broil until almost done (they cook fast about 3 minutes per side), then top with thinly sliced Manchego cheese. Spread good dab of mayonnaise mixture on top and bottom of 12 potato slider buns. Top with romaine lettuce leaves, couple slices of avocado, slider, sandwich pickle slices and slice of cherry tomato for color.

Makes 6 servings (2 sliders per person)
