Frittata is just an Italian omelet usually cooked in a cast iron skillet. Made with Spring asparagus this held up beautifully with sliced new potatoes and buttery nutty Parmesan Reggiano as the delicious binder. A family dinner or brunch favorite and always tastes as pretty as it looks!
