Buffalo Chicken Mac ’N Cheese 🏈
½ cup (1 stick), unsalted butter, divided
½ teaspoon salt
1 lb spiral or elbow pasta
½ cup all-purpose flour
5 cups whole milk ( or any milk you desire)
Salt and pepper to taste
1 tablespoon Dijon mustard
12 ounces cheddar cheese, shredded
8 ounces shredded whole milk mozzarella cheese
4 ounces finely grated Parmesan cheese (about 1 cup), divided
1/4 cup buffalo wing hot sauce (add more depending upon your heat preference)
1 roasted chicken, shredded or store-bought, rotisserie chicken, shredded (about 2 cups)
1 cup fresh bread crumbs or panko crumbs
3 Tbsp. extra-virgin olive oil
¼ cup chopped Italian parsley
Butter 2-quart baking dish with 1 Tbsp butter and set aside.
I large saucepan, over medium heat, add remaining butter and flour stirring constantly, until mixture is slightly golden, toasty and nutty tasting, about 2 to 3 minutes(making a roux.)
Pour in milk and whisk until combined. Add mustard, salt and pepper to taste. Bring to slow boil ,and cook on medium high heat, stirring constantly ,until sauce starts to thicken, about 3 minutes.
Remove pan from heat and whisk in cheddar, mozzarella and 3/4 cup Parmesan until melted. Then stir in buffalo wing sauce.
Stir in pasta and roasted shredded chicken and spoon into buttered casserole dish.
In small bowl, combine bread crumbs, remaining Parmesan and parsley. Sprinkle over pasta mixture.
At this point, you can wrap and save in refrigerator for 1 to 2 days.
Bake mac and cheese until bubbly and golden about, 25 to 30 minutes.
Serve with crumbled blue cheese and celery sticks❣️
