Surprise Chili with Frightful Toppings

One of our favorite family traditions is making Halloween Chili!🎃


My girls are all grown up now but they still want the same thing every year.


We used to have so many people come by after trick-or-treating, the house was packed with goblins and ghosts 👻


This chili is so easy to make and you can make it a day ahead.

It actually tastes better to let the flavors sit a day so they blend and brew to the perfect blend of yumminess!


Anticipating a big crowd? 

This recipe freezes wonderfully a week or two ahead and just defrost in refrigerator the day before and reheat in heavy stock pot product oven.

Great for a crowd, but beware, goblins may come and devour it all.


Surprise Chili with Frightful Toppings


2 tablespoons extra virgin olive oil 

4 celery stalks, chopped

4 carrots, chopped 

1 large onion, chopped

1 red pepper, chopped

3 cloves garlic, chopped

Heat large skillet on medium high heat.  Add and heat olive oil.  Add remaining ingredients and cook until tender, about 5 minutes. 

Add to large stockpot.


8 pounds meatloaf mixture (ground veal, pork and beef mix)

Brown in large skillet. Add to vegetables. 


2 cans (28 ounces each) chopped tomatoes, undrained 

4 tablespoons chili powder

1 tablespoon chipotle chili powder

1 tablespoon cumin

Salt and pepper 

Add to meat and vegetables. 

Cook over medium heat, stirring occasionally, 45 minutes.  This can be kept on low heat for a few hours before serving.  The flavors will develop even better.


Serve chili with shredded cheddar cheese, shredded lettuce, chopped tomato, beans, sour cream, chopped cilantro, chopped scallions and/or chopped avocado for frightful toppings.


Makes about 32 servings.


TIP:  Can be made one or two days ahead to marry flavors, then just heat it up and serve.

TIP  Recipe can be halved.
