3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
3 large eggs
1 teaspoon vanilla extract
4 very ripe bananas- almost black, mashed (about 1 ½ cups , mashed)
Preheat oven to 350°F
Spray 2(8-inch round cake pans) with non-stick spray; line bottom of pan with parchment paper.
In a large bowl combine flour, baking powder, baking soda, and cinnamon; set aside.
In a large bowl of an electric mixer, beat butter on high speed until smooth and creamy about 1 to 2 minutes. Scrape bottom of the bowl with rubber spatula. Add egg and vanilla and beat on medium speed until combined then add mashed bananas and srape sides once again. With mixer on low speed, add dry ingredients and alternately add buttermilk, mixing mixture until incorporated. Do not overmix.
Pour batter into prepared pans and bake about 40 to 45 minutes or until a wooden pick inserted in center comes out clean.
Let cool in pan for 10 minutes and carefully revert cake onto cooling rack.
Freeze 10 minutes before assembly or cakes can be frozen up to 1 month.
Wrap in plastic wrap and large plastic storage bag.
TIP: For fun frosting and sugar free for 1 year old, whip heavy cream with vanilla extract. Layer cake with whipped cream and sliced strawberries for BD baby fun!
TIP: have bananas going too ripe? Freeze them with the skin on! Just defrost in microwave
