Valentine Sugar Cookies
1 cup (2 sticks) unsalted butter, softened
1/2 cup sugar
2 large egg yolks
1 teaspoon vanilla
1/2 teaspoon salt
2- 1/2 cups all-purpose flour
Preheat oven to 325 degrees.
In large bowl of an electric mixer on medium speed, beat butter and sugar until creamy and light in color. Add egg yolks, one at a time, and vanilla. On low speed, slowly add flour and mix until combined and holds together, about 2 to 3 minutes. DO not over mix.
Cut in half and wrap other half in plastic wrap and refrigerate until ready to use.
Flour your board or parchment paper and roll dough to about 1/8 to 1/4-inch thick.
With assorted heart cookie cutters, cut into desired sizes. One half of dough makes about eight (3-inch cookies). With large off- set spatula, place cookies carefully on parchment covered baking sheets. Chill in refrigerator 20 minutes, or in freezer for 10 minutes.
Bake 10 to 15 minutes or until slightly golden. You do not want to over bake. Cool on wire racks before decorating.
Use second dough to make sandwich cookies as show in my video.
TIP: You can freeze dough cookie dough up to 1 month. Each dough makes about 6 ( 3-inch cookies).
Use leftover egg whites to brush on cookie dough before baking for extra golden cookies
Use your favorite butter cream frosting, chocolate drizzles, or favorite jams to make different kinds of cookies using one dough.
